500 grams all-purpose flour
100 grams Whole wheat flour (Type 1700)
300 milliliters lukewarm water
1 cube fresh Yeast (42 grams)
3 Tbsps olive oil
1 tsp salt
2 garlic cloves

Preparation steps

Place flour in a bowl, set aside 1 tablespoon of whole-wheat flour aside. Add remaining whole wheat flour to the bowl, mix, add 2 tablespoons oil and salt and mix again. Mix yeast in a bowl with lukewarm water. Add yeast mixture to flour mixture, knead into a smooth dough, cover bowl and let rise in a warm place for about 45 minutes.

Peel garlic and squeeze through a garlic press.

Then knead bread dough on a floured work surface thoroughly, divide into 2 parts, add garlic to both parts and knead again. Shape bread dough into balls and let rest for about 45 minutes. Shape bread dough balls into oblong loaves. Brush each loaf with oil and sprinkle with reserved whole wheat flour. Bake in a preheated oven at 240°C (approximately 500°F) for 10 minutes. Then reduce the oven temperature to 200°C (approximately 400°F) and bake for 15-20 minutes. Remove from the oven and allow to cool.

To serve, cut into slices and spread with butter.
