- 2 Red onions
- 4 Oranges
- 150 grams Brie
- 2 Tbsps sugar
- 3 Tbsps Red wine vinegar
- 1 pinch salt
- 2 Tbsps vegetable oil
- 2 Tbsps Walnut oil
- green peppercorns (in brine)
- some Walnut (for decoration)
Preparation steps
1.
Peel onions and cut into rings. Peel oranges and remove segments, taking care to remove skin, pith and membrane. Cut brie in small triangles. Arrange orange segments, onions and cheese on plates.

In a saucepan, heat sugar until brown and caramelized. Do not allow to scorch. Deglaze pan with vinegar and bring to a boil. Remove from heat and season with a pinch of salt, to taste. Let cool. Whisk walnut oil, vegetable oil and green peppercorns into caramel-vinegar mixture. Drizzle vinaigrette over orange salad. Garnish with walnuts and serve immediately.
