- 12 large slices Smoked salmon
- 800 grams green Asparagus
- 6 Tbsps olive oil
- juice of lemons
- 12 stems Chives
- 2 Tbsps scallions
- 400 grams cream cheese
- 100 grams Whipped cream
- salt
- freshly ground peppers
- Lettuce (for garnish)
Preparation steps
1.
Rinse asparagus, snap off ends and peel the lower third of each stalk. Cut stalks diagonally into 4 cm (approximately 1 1/2--inch) long pieces. Cook in salted boiling water, about 10 minutes. Rinse with cold water and drain.

Whisk 2 tablespoons lemon juice with olive oil and season with salt and pepper. Stir in 1 tablespoon chopped chives and pour over asparagus. Let marinate about 20 minutes.
3.
Whisk cream with cream cheese, season with lemon juice, salt, and pepper and stir in 1 tablespoon chopped chives.
4.
Spread cheese mixture onto salmon slices, roll up, and tie with chive stalks.
5.
Serve marinated asparagus on lettuce leaves with salmon rolls.
