2 shallots
2 ozs Corn kernel (canned)
1 tsp spicy Mustard
1 egg
2 Tbsps breadcrumbs

Preparation steps

1.

Rinse salmon and pat dry. Cut into pieces and  coarsely shred in a food processor. Peel shallots and chop finely. Drain corn well. Combine salmon with shallots, corn, mustard, egg and breadcrumbs and knead. Let rest for about 15 minutes and season well with salt and pepper.  Shape into 8 patties.

Heat canola oil in a large, non-stick pan and cook patties for about 3-4 minutes per side or until golden brown. Arrange on plates and serve.
