1 onion
½ oz parsley (4 stem)
22 ozs salmon fillets
1 egg
1 ¼ ozs whole grain breadcrumbs (2 TBSP.)

3 Tbsps olive oil
1 Apple
1 oz Caper (2 Tbsp)
9 ozs Cottage cheese
3 ½ ozs Sour cream
2 tsps Horseradish
1 tsp lemon juice

Preparation steps

Peel, wash and finely grate the potatoes. Squeeze well with a cloth, collecting the juice. Let stand a little, then drain juice and mix the settled starch into the potatoes.

Peel and chop the onion. Wash parsley, shake dry and chop. Rinse salmon, pat dry, dice and chop in batches in a blitz chopper. Add to potatoes with onion, parsley and egg. Mix in breadcrumbs, knead and season with salt and pepper.

Form 8-12 meatballs from the mass with wet hands and fry in portions: Heat a little oil in a frying pan. Fry the meatballs on each side over medium heat for 4-5 minutes until golden brown.

Meanwhile, for the sauce, wash, quarter, core, and finely grate the apple. Drain the capers and chop. Mix with the apple, cottage cheese, sour cream, and horseradish. Season to taste with lemon juice, salt, and pepper. Fill sauce for a picnic as desired in a glass and serve with the meatballs.
