For people with sensitive stomachs and intestines, cauliflower is a great choice as its fine cell structure makes it particularly easy to digest compared to other types of cabbage. Beef scores with protein and zinc, which are helpful in the case of infections: In the fight against germs, the body mobilizes amino acids for the defense cells, which the trace element supports in their work.
The pizza with cauliflower base also works in a simple vegetarian version. Simply replace the minced meat with a vegetarian minced meat alternative. If you are not a fan of meat substitutes, you can alternatively use lentils or finely chopped mushrooms. You can replace the Parmesan with a hard cheese with microbial rennet, such as Montello cheese.

- 3 ½ ozs Parmesan
- 2 eggs

- 3 ½ ozs strained tomato (in can)
- 2 garlic cloves
- 14 ozs lean Ground beef
- 2 Tbsps olive oil
- 2 tsps ground Cumin
- 1 red onion
- 2 ¾ ozs Greek yogurt
- 1 Tbsp Tahini
- 1 handful Dill
- 1 handful mint
- 1 lemon
- 2 tsps Sumac (Asian spice)

Preparation steps
Clean cauliflower, wash and grate finely with a grater. Fry cauliflower crumbs in a hot pan without fat over medium heat for 5 minutes, allowing liquid to evaporate as much as possible. Transfer to a bowl and let cool for 10 minutes.
Along the way grate cheese and mix thoroughly with eggs, salt as well as pepper. Then mix with cauliflower crumbs. Cover 2 baking sheets with baking paper. Form 2 oval patties (about 9 inches long) from the mixture on each tray and press lightly. Spread strained tomatoes on top, leaving a border about 1/2 inch wide.
Peel and finely dice the garlic and mix with the ground meat, oil, cumin, and salt. Spread in small portions on the pizzas and bake in a preheated oven at 180 °C / 350˚ F for about 20 minutes, changing the position of the trays after about 10 minutes.
Meanwhile, peel onion and cut it into fine strips. Mix yogurt with tahini, season with salt and pepper. Wash herbs, shake dry, and pluck off tips and leaves. Cut lemon into wedges. Place onion strips on finished pizzas, top with yogurt in small blobs, and sprinkle herbs along with sumac. Serve lemon wedges.
