Preparation steps

Clean cauliflower, wash and grate finely with a grater. Fry cauliflower crumbs in a hot pan without fat over medium heat for 5 minutes, allowing liquid to evaporate as much as possible. Transfer to a bowl and let cool for 10 minutes.

Along the way grate cheese and mix thoroughly with eggs, salt as well as pepper. Then mix with cauliflower crumbs. Cover 2 baking sheets with baking paper. Form 2 oval patties (about 9 inches long) from the mixture on each tray and press lightly. Spread strained tomatoes on top, leaving a border about 1/2 inch wide.

Peel and finely dice the garlic and mix with the ground meat, oil, cumin, and salt. Spread in small portions on the pizzas and bake in a preheated oven at 180 °C / 350˚ F for about 20 minutes, changing the position of the trays after about 10 minutes.

Meanwhile, peel onion and cut it into fine strips. Mix yogurt with tahini, season with salt and pepper. Wash herbs, shake dry, and pluck off tips and leaves. Cut lemon into wedges. Place onion strips on finished pizzas, top with yogurt in small blobs, and sprinkle herbs along with sumac. Serve lemon wedges.
