Sprouts have a high content of vitamins and minerals and are also easily digestible. Here they are hardly recognizable when mixed with the glass noodles -- good for little vegetable grouches! Sesame seeds and beef ensure that one portion covers almost 50 percent of a child's daily iron requirements.
Alternative with fish: Instead of beefsteak mince, use crab meat and add it to the pan with the ice cream strips only at the end.

- 2 ozs Glass noodles
- 7 ozs Mung bean sprouts
- 1 small red Bell pepper (about 150 grams)
- ½ bunch Chives
- 1 garlic clove
- 2 tsps Sesame seeds
- 2 eggs
- 2 tsps soy sauce
- 2 Tbsps vegetable oil (eg, peanut oil)
- 4 ozs Ground sirloin
- salt
- peppers

Preparation steps
Put glass noodles in a bowl and pour in 300 ml (approximately 1 1/4 cup) of boiling water. Steep 1 minute, then pour into a strainer and rinse with cold water. Drain well.
Rinse sprouts in hot water and drain well.
Cut bell pepper into quarters, remove seeds, rinse and cut into thin strips.
Rinse chives, shake dry and cut into rolls. Peel the garlic and chop into small pieces.
Toast sesame seeds lightly in a large non-stick pan, place on a small plate and let cool.
Beat the eggs in a small bowl and whisk with 1 teaspoon soy sauce.
Heat 1 tablespoon oil in a skillet and pour in the eggs. Fry like a pancake over medium heat until golden brown, about 2 minutes each side.
Remove the pancake and let cool 2-3 minutes. Then roll up tightly and cut into thin strips.
Heat the remaining oil in the pan and brown the sirloin over high heat for about 3 minutes.
Add bell peppers, sprouts, garlic and glass noodles. Season with salt and pepper and fry over high heat for about 1 minute, stirring constantly.
Add chives and egg strips and fold into noodles. Season with the remaining soy sauce to taste, sprinkle with sesame seeds and serve.
